Avocado Chicken Salad Sandwich
A simple and healthy sandwich you will want to make all the time.
Directions:
Start by adding the avocados to a medium-sized bowl and lightly mashing them with a fork. Then add the next 9 ingredients, through salt and pepper. Stir to combine, taste, and adjust seasoning if necessary.
Spread the mixture onto your toasted slice of bread and top with a generous amount of arugula and microgreens before adding the second slice. Enjoy!
Pro Tip: We love using a pre-cooked rotisserie chicken in a pinch.
