Beet Salad with Herb Dressing
This colorful and flavorful dish is a perfect side for any occasion.
Directions:
To make the beet salad, begin by placing your beets in a saucepan and covering with water. If you are using different colored beets, boil in separate saucepans. Add a cinnamon stick and bay leaf to each pan and cover. Boil for 20 minutes or until beets are fork tender. Drain from water and peel skins off under cold running water and set aside.
While the beets are cooling, in a medium bowl, mix the minced shallot, vinegar, and large pinch of salt. Let stand for 10 minutes, then stir in the orange zest, tarragon, parsley, chives, and oil; season with salt.
Slice the beets into thin wedges and arrange on a platter. Be sure to mix your colors! Stir the herb dressing and spoon over the beets, then top with the hazelnuts. Enjoy!
