Crispy Shrimp and Chive Dipping Sauce
The perfect seafood meal to break up the week.
Directions:
Begin by rinsing all your shrimp and pat them dry. Season with salt and pepper and set aside. Combine 1/4 cup panko, parsley, thyme, and crushed red pepper in a food processor and pulse to combine; mixture should be semi-fine. Combine herb mixture with remaining panko in a shallow dish. Add egg whites in another shallow dish and lightly beat. Dip each shrimp into the egg whites then dredge in panko mixture, pressing to adhere. Repeat with remaining shrimp.
Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon oil to pan and swirl to coat. Add half of the shrimp to pan and cook for 3 minutes on each side or until done. Repeat with remaining oil and shrimp.
Combine yogurt and remaining dipping sauce ingredients in a small bowl. Serve with shrimp. Enjoy!
