German Potato Salad

This potato salad is light and flavorful, for a warm summer day.

Directions:

Cover potatoes with cold salted water, bring to a boil, and cook until tender. Drain and transfer to a large bowl.

While you are cooking your potatoes, heat olive oil in a medium skillet over medium-high heat. Add onion and season with salt and pepper. Cook, stirring often until soft, about 5 minutes. Remove from heat and mix in vinegar. Add to your cooked potatoes along with the green onions, dill, and toasted caraway seed and toss, crushing potatoes slightly. Taste your German Potato Salad and season with salt and pepper if necessary. Enjoy!
