Mint Cucumber Margarita
Cool as a cucumber.
To make the simple syrup, combine sugar, mint and water together in a small saucepan and heat over medium heat until simmering, stirring continuously. Reduce heat to low and cook until the sugar is dissolved. Strain into a pyrex and set aside to cool.
To make your margarita, start by prepping your glasses. Using your lime wedge to wet the rim of two cocktail glasses and dip in margarita salt to coat. Fill with ice. Then fill a cocktail shaker with ice. Add in the tequila, lime juice, mint leaves, cucumber slices, and mint simple syrup. Cover and shake for 30 seconds until frothy. Pour over ice and garnish with cucumber slice and more mint. Enjoy!
